Distinctive cheese from Franche-Comté, instantly recognisable by its signature thin layer of ash running horizontally through the centre. Made from fresh unpasteurised cow's milk, Morbier develops a thin, natural rind that protects pale yellow paste with buttery, tender texture. The ash layer, originally used to protect morning curd before evening milk was added, now serves as visual reminder of this cheese's artisanal heritage.
The PDO status ensures authentic production using only raw milk from local farms in the Jura mountains. Each wheel is carefully crafted using traditional methods that create Morbier's characteristic supple texture and mild, fruity flavour with subtle nutty undertones. The ash layer is completely edible and flavourless, purely aesthetic and historical.
Serve at room temperature to enjoy full buttery texture. The thin rind is edible and adds earthy notes. Perfect melted in croque-monsieur, layered in gratins, or enjoyed with crusty bread.
Made by Franche-Comté farmers using fresh unpasteurised milk from their own herds grazing in the Jura mountains. Traditional production methods maintain the authentic character protected by PDO regulations.
