This exquisite goat cheese showcases the ingenuity of French cheesemaking, crafted from raw milk produced by Alpine goats and matured for 4 to 7 weeks on its signature chestnut leaf. The leaf serves as a natural humidity regulator, absorbing excess moisture when needed and returning it if the cheese becomes too dry, creating perfect maturation conditions. The thin white bloomy rind develops gentle creases with occasional blue mould dots appearing as the cheese matures, whilst the paste maintains a fine, firm texture that becomes luxuriously creamy around the edges.
The chestnut leaf not only provides natural humidity control but also imparts subtle earthy notes that complement the goat's milk character. The careful balance between firm centre and creamy edges creates textural complexity that evolves with each bite, whilst the raw Alpine goat milk delivers pure, authentic flavour.
