F1 grade Wagyu offers extraordinary marbling throughout the meat, creating unparalleled tenderness and that distinctive melt-in-the-mouth texture. The olive feeding programme adds subtle nutty notes to the beef's natural richness, whilst the slow-growing process on Yorkshire's Scurf Dyke pastures ensures exceptional flavour development and quality.

Preparation: Allow to reach room temperature before cooking. Season simply with salt and pepper, then sear in a hot pan for 2-3 minutes each side before finishing in a 200°C oven for 15-20 minutes for medium-rare. Rest for 10 minutes before carving. The bone makes an impressive handle and the meat should be sliced against the grain for maximum tenderness.
