Bird's eye chilli — also known as pili pili or oiseau — is one of the most powerful chilli peppers in the world. These small, 2–3 centimetre dried pods pack an explosive 10/10 on the Scoville scale, delivering a fierce, sustained burn that lingers well after eating. What distinguishes bird's eye from other extreme-heat chillies is a pronounced fruity sweetness beneath the fire, which gives it a flavour dimension that pure-heat varieties often lack. The peppers turn from green to bright red at maturity and are harvested in Uganda, where the equatorial climate provides the intense heat and sunlight the plant demands.
The name comes from the birds that spread it — they eat the peppers without experiencing the burn, then disperse the seeds across vast distances. It was first brought to Europe in the 16th century and has since become a cornerstone of West Indian, African, and South-East Asian cooking. It works well added whole to soups, stews, sauces, and oils, or paired with tomato sauces, pizzas, and — perhaps unexpectedly — chocolate desserts, where its sweetness complements the cocoa.
Producer: Terre Exotique, a French spice house founded in 1998 after its founder discovered Penja pepper on a plantation in Cameroon. The company sources directly from growers worldwide and processes at its facility in France, maintaining close relationships with producers to ensure traceability and quality across its range.
