Cinco Jotas Acorn-fed 100% Ibérico Pluma (feather cut)

Since 1879, Cinco Jotas pigs have been raised free-range in the lush dehesas (meadows) of southwest Spain and fed a diet rich in acorns during the montanera season.

The unique genetic makeup and feeding habits of this 100% Ibérico breed have earned them the nickname "olive trees with hooves," due to their high levels of oleic acid, similar to that of olive oil.

Cinco Jotas meats are renowned for their bright red colour and fine marbling, which reveal flavours and hues that evoke a deep connection to nature, passion, and dedication to this exceptional breed.

The previously underused pluma is a particularly flavorful and aromatic cut, considered the most authentic expression of acorn-fed 100% Ibérico meat. Its healthy fat marbling makes it exceptionally succulent and tender. Pluma can be cooked with minimal oil and is delicious grilled, though it also shines in stews and casseroles. It has a higher cooking point than other cuts of the Iberian pig, making it versatile for various culinary applications.

For a truly delicious alfresco lunch - try roasting in a pan at high heat with no oil or grilling over the cool side of a BBQ. Look for deep caramelisation on both sides.

Serve with something light and crunchy, like tomato salad or roasted onions and wild mushrooms. Cooked properly (very simple), it will leave a lasting impression! It can be served pink!
