This is a shelf-stable compound butter, not a fresh butter block — it sits in the storecupboard until you need it, then goes in the fridge once opened. Spoon it through hot pasta, lump it onto a resting steak, or stir it into a finished risotto. Truffle and butter is one of the oldest and most effective partnerships in cooking. The fat amplifies the volatile truffle aromatics in a way that nothing else can, and having it ready-made in a jar removes all the effort of making a compound butter from scratch. The flavour is distinctly white truffle — that sweet, garlicky pungency rather than the earthy depth of black — and it comes through clearly even in small amounts.

This butter is ready to use straight from the jar. Spoon out what you need and let the heat of the food do the rest.

Pasta: Spoon a teaspoon per person into freshly drained hot pasta and toss. The butter melts and coats every strand with white truffle. Add a splash of pasta water to emulsify and finish with Parmigiano-Reggiano. Tagliatelle and fettuccine work best.

Steak: Lump a spoonful onto a resting steak. It melts into a truffle-scented pool as the meat rests — drag each forkful through it. Works with any good cut.

Risotto: Stir a spoonful through a finished risotto just before serving, off the heat. The white truffle lifts the whole dish without overpowering the rice.

Eggs: Fold a teaspoon through scrambled eggs just before they come off the heat. The eggs absorb the truffle-butter flavour as they finish setting.

Vegetables: Stir through steamed asparagus, new potatoes, or a warm celeriac purée. Simple vegetables dressed in truffle butter need nothing else.

Toast: Spread on warm bread for the simplest possible truffle hit.
