Summer Truffles

Tuber Aestivum

The most accessible fresh truffle, available from May through to September. Tuber aestivum has a milder, more delicate flavour than its winter counterparts — subtly earthy and nutty, with a lighter aroma. The exterior is dark and knobbly like a black winter truffle, but the interior is paler with less defined marbling.

Best used generously: shaved over salads, pasta and light dishes, or infused into butter and cream where the gentle flavour can permeate. An excellent introduction to fresh truffles for anyone yet to try them.

Alongside fresh summer truffles in season, this collection includes a year-round range of truffle products — oils, sauces, butters, salt and honey — for cooking with truffle when the fresh season is closed.


Season

May to September. Sourced from France and Italy, hand-graded at our UK facility, and dispatched same-day on orders placed before 2pm.


How To Use Summer Truffles

Summer truffles need a fat base to carry the aroma — butter, cream, cheese, eggs or olive oil. Shave generously over fresh pasta, risotto, scrambled eggs, salads or carpaccio. Their milder flavour means you can be more liberal than with winter truffles.

For a simple preparation, fold shavings into softened butter with a little salt, rest for 24 hours, and use on toast, steak or pasta. Or rest the truffle overnight in a sealed container with eggs — the aroma penetrates the shell and produces extraordinarily flavoured eggs for scrambling.

A truffle slicer is essential for paper-thin shavings; a fine Microplane works for incorporating truffle into sauces and compound butters.


Truffle Products

When fresh summer truffles aren't in season — or when you want truffle flavour without the spend — the collection includes truffle oils, sauces, butters, salt and honey. These use preserved truffle to deliver consistent flavour year-round, and work well drizzled over finished dishes, stirred into risotto, or used as a finishing condiment.


Storage

Wrap fresh truffles individually in kitchen paper inside an airtight container. Refrigerate and change the paper daily. Used at their best within 5 to 7 days of arrival.
