FRESH ITALIAN WHITE TRUFFLES

White truffles, the rarest of the rare, have a short season and are found in Piedmont, Tuscany, Emilia Romagna and Marche in Italy. They come into maturity after the September rains, after the first frost has passed. Once formed, it ripens in a single day, unlike the Périgord black truffle, which matures over a month to six weeks.

White truffles are ivory to chestnut in colour and, upon inspection, should have an aroma that is overwhelmingly pungent, clean, and sweet, springy to the touch but not soft.

ORIGIN

Our Italian white truffles are sourced from the renowned truffle-producing regions of Piedmont and Tuscany. While some competitors may offer cheaper truffles from other countries such as Hungary, Slovenia, Croatia, and Serbia, the unique terroir of these Italian regions imparts an unparalleled depth of flavour and aroma to our truffles. The rich, loamy soil and specific climate conditions in these areas create the perfect environment for producing white truffles with intense, earthy notes and a complex bouquet.

It's worth noting that the famous 'Alba white truffle' is somewhat of a misnomer. Alba is a town in Piedmont that hosts a celebrated truffle festival, but it's not a specific truffle-growing area. Our truffles come from the surrounding Piedmont countryside, ensuring authenticity and the highest quality; Focusing on these prime Italian sources guarantees our customers are experiencing the pinnacle of white truffle excellence.

Pricing

White truffle prices are reset weekly based on the live market in Alba, Italy, where prices are determined each Sunday evening. Due to their extreme seasonality and sensitivity to weather conditions, prices can fluctuate significantly from week to week. As these prized truffles can only be wild-foraged (never cultivated) and have a very short shelf life, their market value is directly impacted by factors like rainfall, temperature, and harvest quantities. This is why you may notice our prices changing weekly to reflect the current market conditions.

BUYING WHITE TRUFFLES

During white truffle season, we receive fresh batches daily in various sizes. To ensure optimal quality and value, we fulfil all orders using the minimum number of truffles possible whilst meeting your weight requirements.

Truffle allocation guidelines:

  • Orders under 30g: maximum 2 truffles
  • Orders 31g-50g: maximum 3 truffles
  • Orders 100g: maximum 5 truffles

Please be aware that fresh white truffles naturally lose approximately 3% of their weight daily due to moisture evaporation. We factor this into our selection process to ensure you receive the finest quality truffles at their peak condition.

COOKING WITH FRESH WHITE TRUFFLES

Fresh white truffles should be consumed as soon as possible to ensure the best truffle experience.

Because they are so aromatic and pungent, but their aroma tends to fade relatively quickly, white truffles should **NEVER** be cooked but shaved as thinly as possible using a truffle slicer over something hot, preferably buttery, like risotto or fettuccine pasta.

They should never be mixed with any ingredient high in acidity, which would cause the flavour of the truffle to subside. Let the truffle work its magic, and always add it at the end of the preparation.

Always allow your white truffle to come to room temperature before using it to allow the aroma to develop more than straight from the fridge.

We recommend a minimum of 8/10g per portion to live the true white truffle experience!

Storage: white truffles should always be stored in a refrigerator. Each truffle must be wrapped individually in absorbent paper, ensuring it remains dry.

To prevent the aromatic contamination of other foods, we recommend white truffles be stored in an airtight container. This method allows the preservation of white truffles for no more than five days.
