Stock is the foundation of good cooking. It underpins soups, sauces, risottos, braises, and most of what's worth cooking. The products here are what professional kitchens reach for when they don't have time or volume to make stock from scratch — a genuine shortcut, not a compromise.


Salsus — Professional Stock & Demi Glace

A Norwegian producer making stocks and demi glaces for professional kitchens. Slow-cooked from fresh Norwegian raw materials — vegetables, herbs, meat, fish, dairy — no additives, no flavour enhancers. The recipes are developed with leading Norwegian chefs, and the quality shows: real body, clean flavour, the natural gelatin that comes only from long-cooking bones and aromatics.

Stock or Demi Glace

An important distinction. Stocks are seasoned and ready to use as a liquid base — soups, risottos, braises, poaching. They are not designed to be reduced. Reducing a seasoned stock concentrates the salt and the seasoning along with everything else, and it quickly becomes too much.

For sauce-making, use a demi glace. Already concentrated, intensely flavoured, glossy in texture — the foundation for pan sauces, gravies, and classical French sauces. A spoonful deglazed into a hot pan after searing a steak or roasting a chicken produces a restaurant sauce in minutes. The single most useful product in the collection.


Terre Exotique Bases & Pastes

Concentrated flavour pastes from Terre Exotique. The chicken, fish and veal bases stir into water for a quick stock or go straight into sauces and marinades for added depth. Tandoori paste for marinading meat, fish and vegetables. Garlic paste for dressings, spreads and quick cooking where fresh prep isn't practical.


Delivery

Salsus stocks and demi glaces are frozen — store in the freezer on arrival, defrost as needed. Terre Exotique bases and pastes are ambient and shelf-stable.
