This traditional grazing method produces meat with superior marbling, texture and a distinctive taste that reflects the land's natural bounty.

For best results, bring to room temperature and season generously. Sear over high heat to develop a caramelised crust, then finish in the oven at 180°C until it reaches your preferred temperature (52°C for medium-rare). Rest for 15-20 minutes before carving along the bone.
