The Varieties
Aleppo — mild, fruity, faintly oily. The everyday flake of the eastern Mediterranean and the Levant. Warmth without aggression.
Ancho — a dried poblano, sweet and deep, hints of dried fruit and cocoa. The backbone of Mexican mole.
Espelette AOP — the Basque chilli. Gentle, building heat with a fruity edge. Carries AOP protection from a defined area of the Pays Basque, used as freely as black pepper in French cooking. We carry it as a purée, ready to stir into sauces, marinades and dressings.
Chipotle — smoked jalapeño, crushed. Deep, smoky, restrained heat. For braises, beans, rubs.
Habanero — fruity, floral, properly hot. The character behind the heat is the reason to use it.
Bird's Eye — clean, sharp, fast heat. The Thai standard.
Angel Hair, Wiri Wiri, Amazon, Pequin — whole dried, each with its own profile. Crumble, grind, or rehydrate depending on the dish.
Formats
Whole dried for grinding, crumbling or steeping. Crushed and flaked for stirring straight in. Purée — like the Espelette — for smooth, even heat through a sauce.
